Stem Ginger Biscuit Gems
Sometimes these are crumbly and other times they are really crumbly! Struggling to find that balance between biscuits that turn out like boiled sweets and biscuits that crumble just by looking at them, however…
These do taste amazing! I love the smell whilst they’re baking, perhaps because I do get a little carried away with the stem ginger sometimes, I love the stuff!
I do wonder if the ground ginger is necessary in these as it’s a strong flavour. Defo a biscuit to warm you up on a cold Wintery night! Next time I make these I need to find something that’s going to stick it all together whilst it bakes.. maybe some Xanthum gum or arrow root?
175g gluten free flour (plain)
1 teaspoon ground ginger
1/2 teaspoon gluten free baking powder
100g butter or dairy free margarine, plus extra for greasing the baking tray
50g caster sugar
50g preserved stem ginger, finely chopped.
