Chuffed with my Choux Puffs
I’ve always watched bakers make choux pastry on TV programmes and thought it looks like the most fun pastry to make, I mean, you get to use a saucepan and watch all the chemistry happen! But somehow thought Gluten Free choux must be impossible!
My first attempt is in no way perfect, just look at that ‘cracking’ texture! But they tasted just how I remember cream puffs tasting and that’s all that matters to me!
The mixture in the pan didn’t form a dough, more a sticky crumble that wanted to form a dough. I didn’t worry, just kept following the recipe, adding one egg at a time. I don’t have stand mixer, instead I used a hand mixer, but seemed to do the trick OK.
Once in the oven the little (big) splodges puffed up wonderfully. After their 30 mins of cooking, I switched the oven off, but left them in there to dry out and become room temp - nearly sabotaged by boyfriend who attempted to take the wooden spoon out of the oven door.
I’ve not piped whipped cream before either, so it was all a little messy, hence why I didn’t hang about and just filled up my little (big) choux’s, I had planned to make them pretty - next time! And they’ll probably have chocolate on the top as it needed something to sweeten it up.
