Vanilla Macarons.. for Days..

I never thought I’d be sitting on my kitchen floor waiting for feet to form on a bake through my oven’s door, but hey, what are Sunday afternoons for?!
I’d been deliberating over what to bake since Friday evening, first I thought shortbread or banana muffins, but I’ve made these before, then Macarons popped into my head! I’ve seen these used as decorations for bigger (maybe more impressive bakes) so thought these would be fairly simple to make…. in theory.
My first macaron mix looked good, (all though the orange colouring gel didn’t seem to add much colour, and I added a lot) I could make a figure of “8” with the meringue mix, I piped them out onto the tray and let them form their skin, doing the touch test to see if my finger would stick.. all good! Until they went in the oven.
I have a fan oven and totally forgot to lower the suggested temperature, so I think the first batch exploded a bit (there’s a theme to my recent baking…)
Undeterred, I had some lunch, did some googling of correcting macaron mishaps and got all my ingredients and my cleaned bowls and spoons back out the cupboard to start again.
I made three trays and adjusted the temperature for all of them. With one batch I even opened the oven door - I don’t think this made a difference.
The shapes of take two are much better, but they seem a bit hollow and aren’t as shiny as take one, so still some practising needed here - I think the mixture was a little wetter than the first, perhaps..
So, until I can restock on Almond flour… and chose what colour/flavours to make next..
